Description
The Brazil Cold Soul was carefully roasted for you by Methodical Coffee. This unique, unconventional offering comes to us from Luiz and Flavia Saldanha in Paraná, Brazil. Their farm, Fazenda California, sits at roughly 800 meters above sea level and this specific lot is comprised of their Mundo Novo coffee trees. After harvest, the coffee undergoes a 24 hour controlled fermentation in which the beans are submerged and inoculated with a special yeast. The yeast is selected to control the microbial activity during the fermentation, enhancing the brightness, viscosity and acidity in the cup.

Loved this coffee. Had some great dark chocolate notes and aroma. Very smooth.

I may have gotten a bad batch, but this coffee is absolutely terrible. It tastes like dull mud, but worse as it also has subtle notes of muddled cherries and raspberries with a stomach-upturning twist. This is likely due to the processing method of these beans, and is the opposite of a vibrant coffee (brewed in Chemex, known for its vibrancy, and got the same results twice).
