The Burundi Gahahe Cima Natural was carefully roasted for you by Goshen Coffee Company. Cima yeast helps amplify flavors through the coffee’s fermentation process. Coffee cherries and Cima naturally ferment together, then move to raised beds to dry for 2-3 weeks. The result is dramatically complex, with juicy fruit notes that remind us of pomegranate, guava, raspberry, and red licorice. Burundi Gahahe Cima Natural is a 2023 Good Food Award Winner!

Outstanding natural, it’s extremely flavorful. I made a 1:2.5 shot from this and the funkiness was so powerful that it hardly counted as an espresso. It’s like eating good dark chocolate bar with citrus fruit in it. The finish is solid cacao.

The yeast made it almost like a sour beer- delicious and with that guava mouthfeel that tingles a bit. Also notes of pineapple, the cloves came through amazingly, pomegranate and raspberry for sure (but tart raspberries!). Didn’t quite get the red licorice, but if I brewed with a lower extraction some interesting nutty dimensions came out as well, sort of a muddy walnut.

This is unequivocally the worst coffee I've had in years.
I used it for espresso with a Niche grinder and the Breville Bambino Plus machine. I'm sure some of it is just down to the limitations of my machine, but I've had a lot of other light roasts and thoroughly enjoyed them.
This one, though. . . No matter what I extracted from it or for how long, the end result was pure trash. The base flavor profile is unpalatable, to the point that my wife equated it to vomit. I must say, I don't disagree. We threw most of the bag and had to buy a replacement just to get through the week. 0/10 would not recommend.
I really think these coffees that use yeast and are fermented are the most overrated coffees. The are the sour of craft beer. They add a copenhangen chewing tobacco flavour, however, this is the best one i have had.
