This is Monarch brought to you by Onyx Coffee Lab. The Monarch features washed coffees from Ethiopia and Guatemala. A very sweet sugar dense coffee that creates multiple complex sugar browning notes from Swiss chocolate to cacao with molasses and a subtle note of mulled wine. This blend pairs excellent with cream or milk, and is ideal for drip or espresso brewing.
The red wine and dried berries really come through and were notes I didn't realize were in this blend. A but too bright for my taste, but would recommend if you enjoy some of those brighter notes. Beautiful packaging was sadly damaged during transit to me.
I don't like most Ethiopian coffees, and this one had the dreaded blueberry notes in both espresso and cold brew.
I brewed Monarch using Onyx Lab’s recipe of 19 grams of coffee to 55g of espresso, in 25 seconds. I’m still learning to detect specific flavors, but I noticed sweetness once I had the grinder dialed in. Very pleasant with milk. Too bad it’s only 10 ounces! I was sad when this ran out today.
It was good but not my favorite from Onyx. I tasted some cherry on the back end but felt a little one dimensional. I used a Moka pot so maybe it would be different in an espresso machine. I didn't taste the chocolate or caramel. How are people tasting these subtlties? Is there an art to the way you taste it?

Excellent everyday coffee. I enjoyed this pulled as a lungo in a cortado with the occasional pour over. It has a nice dark sweetness and very little bitterness.
For all the fancy packaging, I didn't feel like the coffee lived up to the advertising. I did not find the coffee to be remarkable, but on the good side, it was not acidic. It was a mellow, dark liquid in the cup.
I have been brewing both espresso and the occasional moka pot of this coffee for a bit now. The overwhelming basic impression is how little I have to say about it. It has a lovely, complex flavor profile, done competently with no objectionable notes and great mouthfeel. But nothing wows me. I would say it's a little less sweet than the depth of the cocoa flavors would invite, and the acidity is muted to the point that I'm not sure it brings much to the party. All that said, I do enjoy drinking this coffee.

Very nice coffee. Strong flavor. It wish it were a smidge oilier, but it is a good, rich roast. Tastes just a little bit burnt but the finish has notes of chocolate and a slight tang.
Almost too sweet and toasty for me, but good overall.

Cocoa forward. I changed my mind on this. It's not bad actually. I just didn't like it as an espresso.
Excellent coffee for espresso. Not too bright
Good flavor with a hint of amaretto at the end. The reason I'm rating as good and not excellent is because I've looked for espresso specific beans and when I tried this coffee as drip it was a bit better than the espresso. I used 18g in with 1:2 ratio in 30s brew time for the espresso.
Nothing too out of the ordinary. Still was slightly bitter etc.
This was some of the best coffee I've had in a while. I feel like ive been leaning more towards light fruit forward coffees lately and this reminded me how much I like a deeper darker style from time to time. I love how the website has brewing details for all the different styles you might use!

Great flavors, pulled as espresso, ristretto, french press. Black, latte, cappuccino, cortado. Best as espresso, 45ml pulled from 15g.
The description is spot on. It was good as pour over (little dark for me but still good), but it was amazing as an americano and cortado.
I enjoyed this but I felt it was a little bitter.
Chocolate, wine and berry notes. This is a great coffee to drink with dessert, or with cream and sugar.

This was on point with what it said it was honestly, and we thought we would like it - it turns out the carmel-rich, syrupy flavor just really isn't something we like
Very good coffee
It was good but was not as fresh after a week. The pressure on my Breville Barrista Express wasn't even registering the last 4 days because the coffee went stale. I'm wondering if they Indeed are sending me what is stamped on as the roasted date.

This was a solid coffee, but overall unimpressive. I felt the roast was actually a bit darker than we usually want, and it was a bit earthy in flavor for my test. I did not get any caramel notes.
Brewed as espresso for lattes, this was my favorite so far. Subtlety sweet with smooth espresso flavor.

The more I am learning about coffee, this has become my favorite. The smell is wonderful, but I think I like a little lighter roast.
On the far end of the traditional scale. Syrupy, thick, and chocolaty. No bright, tangy, fruity notes. Solid blend, but tastes more like second than third wave coffee.
I liked this one a lot and could definitely taste cacao and caramel. I also liked the very rich flavor this had, but would be interested in trying something just a bit stronger.

I love the complexity of the flavor. I get almost a chocolate-covered cherry vibe from this one. I like the blend of fruitiness and caramel-ness

Good as straight espresso, but slightly unbalanced with a limey aftertaste. Mixed with milk, I find the aftertaste slightly off putting. Pretty good bean though, otherwise.

This was one of my favorite coffees I've recieved in awhile. The sweet taste of the Ethiopian beans cut through the chocolate without tasting acidic or upsetting the balance of the blend.
MEH. 2 STARS BECAUSE OF THE PRICE. ITS NOT THAT BAD BUT FOR THE MONEY IT SHOULD BE AMAZING.

So far this has been our favorite. Good balance of flavor and body, but could have used a little more chewy nuttiness perhaps. A darn good cup though!

Finally brewed this one right this morning! Smooth, slightly chocolatey, but no overt flavors. Good full mouthfeel.

pretty good flavor here, maybe a little light for my taste. overall better than a lot of beans i have tried. i believe i liked the boldness, but it has a bit of a sour taste the end that I've come to find in most lighter coffee, perhaps it is the slight caramel flavor. its not too heavy which i like but leaves a little bit of an undesirable smokey taste at the end.

Absolutely loved this coffee. I tend to be biased towards sweeter notes but this one struck a good balance for me. Not too sweet, not to acidic. Very well rounded. Great coffee. Just didn’t knock my socks off.

We aren't extremely refined in our palates but this was far too bitter. I ended up taking it to work for others because we didn't enjoy it. The guy in the office who drinks two day old microwaved coffee also found it too bitter! However the Ozark Copper Espresso roast was very smooth and rather addicting so don't write this roaster off if you too aren't a fan.
