This Anaerobic processed coffee was sourced from Carmo de Minas, Minas Gerais in Brazil and was produced by Fazenda IP at 950 - 1,200 meters above sea level. Anaerobic processing ferments the coffee cherry in sealed water tanks that force all oxygen out of the system. The oxygen-free environment causes a completely different fermentation process. Following the anaerobic fermentation, this lot was sun-dried, like a typical natural-process coffee from Brazil.
