The Brazil Santana Honey was carefully roasted for you by Topeca Coffee Roasters. The farm, Fazenda Santana, sits at about 900 meters above sea level, is planted with mostly yellow bourbon. This particular microlot from the 2020 harvest is "red honey" that won first place in the São Paulo's best cup competition. In the "red honey" process the ripe cherries are de pulped, then a minimal amount of mucilage is washed off from the parchment, leaving most of the mucilage layer adhered to dry on the parchment. The cup is very sweet, creamy, and mellow with a juicy malic acidity. You'll find flavors of caramel, apple, honey, vanilla, hazelnut, nougat, vanilla and milk chocolate. A great coffee to ease into. We find it to be versatile coffee as well, brewing a delicious cup of filter coffee or shot of espresso.
