Coffee Story
Description
This is the Colombia Aponte brought to you by Sisters Coffee Company. Comprised of descendants from pre-colonial Incas, now called Ingas, the Aponte community has been nestled in the highlands of Nariño, Colombia for hundreds of years. Situated close to the Galeras volcano, the mountainous terrain kept this community in relative isolation until the last century. Within the last decade the community began cultivating coffee, which flourishes in the rich ash-laden volcanic soil. This year’s lot is Honey processed, indicating that the coffee fruit was removed after harvest but that the honey/pectin layer around the bean was retained during drying. The result is a coffee that is beautifully complex and sweet.
