The Guatemala Las Sonajas was carefully roasted for you by Cat & Cloud Coffee. This Fully Washed coffee was sourced from the growing region of Antigua in Guatemala and was produced by the Hunapu Farmer Group at 1700 meters above sea level.
Sweet tasting. I brewed it a bit longer to get more flavor, and it's a nice cup.
Great in a French press. One of the smoothest coffees I’ve had.

I am not a fan of acidic coffee which is a character of light roast beans. Although, this coffee bean is low acidity, smooth,and pleasant . This is my first bag and i am liking it. I brewed this coffee using Hario v60 and Chemex. Yummy!
This began as a solid, but overall underwhelming coffee given higher expectations. It always had a nice balance and smooth finish, but seemingly lacked distinctive flavors and the complexity that was advertised. Then I accidentally let it brew for around 4m50s in the French press instead of the usual 4. I expected a bitter, over extracted cup but instead was thoroughly surprised to find it to be intensely sweet and juicy. Even the pleasant acidity which I previously associated with grapefruit took on a sweeter quality like that of an orange. I’m finding I prefer this type of subdued acidity that takes a backseat to sweetness to the sharper kind that comes with more lemony notes. All in all, an excellent coffee that greatly benefited from my “mistake” of a longer extraction.
Pretty nice coffee. It's complex in a bit of a weird way... notes of savory nuttiness and a little earthiness that I didn't LOVE... but overall a great and interesting coffee.
