This is the Guatemala San Pedro brought to you by Quills Coffee. This fully washed coffee was sourced from the growing region of Atitlan in Guatemala and was produced by the various small holder producers at 1,500 - 1,600 meters. This cup has a classic Guatemalan profile that we love: milk chocolate, toffee and lovely, balanced citrus acidity.
Great roaster! Got a chance to meet these guys in Indy a few weeks back. As far as Guatemalans go, this one is solid as they come. Chocolatey, smooth, bright, and easy drinking but like most Guatemalan Coffees I've had, nothing jumps out at me with this one. The Brazil Santa Ines from Quills blew me away, was hoping for something similar here. Nonetheless, still a good cup!
Brew methods used: Chemex, V60, and AeroPressPros: Complete lack of 'bad' flavors. Lasting flavor.Cons: Far too one dimensional. Though the single flavor was good, it was neither unique or dynamic. Notes: I have a strong preference for layers of flavor and complexity of flavor notes. I'm exploring coffee in the same way I explore beer and cigars. More complexly bright, bold, juicy, citrus, aromatic, and layered flavors are preferred. My two favorite coffees were light roasts from Rwandan origin, if that helps :)
This was a coffee without a lot of thrills. It was a smooth cup of coffee but I couldn't get much flavor out of it. It lacked the pop I like.
