The Waxwing was blended and roasted for you by Red Rooster Coffee. Waxwing is a custom blend of Fully Washed coffees from Colombia and Honduras. Developed as all purpose blend, this coffee is a great option for both espresso and filter coffee.
Maybe it was just the somewhat darker roast but didn't care too much for this one. Definitely picked up on the chocolate notes.
Brewed in the Ratio 8 coffee maker. 55g beans, medium grind (22/40 - Baratza Encore). 1.2L of water.
This is the kind of coffee I'm always looking for. It has bold flavor without being to dark.

It tasted fresh, but something about the flavor profile both me and my wife did not just Love.
aeropress: kind of..boring(?) not as flavorful, not that rich.
This was just ok. Bitter earthy. Had a burnt aftertaste that lingers. Like burnt Carmel but not in a nice way.
Have only used for espresso so far. I'm not getting the chocolate or the caramel flavors, it's very bitter (but not in such a way where I brewed incorrectly). I'm excited to try this as a pour over or cold brew. It goes well with milk. I think maybe I like my coffee a liiiiittle bit brighter. We'll have to see!
