The Waxwing was blended and roasted for you by Red Rooster Coffee. Waxwing is a custom blend of Fully Washed coffees from Colombia and Honduras. Developed as all purpose blend, this coffee is a great option for both espresso and filter coffee.

Not too bad. Did struggle a little with the recipe, but this is a good general purpose coffee. May not be the best for espresso/cappuccinos.

Decadent blend with rich chocolate and caramel notes. Perfect with a splash of sweet creamer, enjoyed on the sunporch on a weekend morning.

I haven't tried it yet. However, I like more of a light to medium blend and I don't like extra flavors in my coffee. I drink it black. So I will add a different review after trying it.

Brewed with the Areopress. Nice, smooth, easy drinking coffee. Drinks more on the lighter side, I know it's called a "medium dark roast" but it seems like its just a medium roast (which is good).

Pretty good. It was what I'd consider medium roast more than medium dark but I liked it as a all purpose coffee. I'd like to try more from this roaster in the future.

This was a fantastic coffee. I absolutely loved the flavors and it's perfect for a smaller cup in the mornings or the afternoons.
I will say, despite how much I enjoyed it, it was just a bit too dark and bitter for me.

This one was earthier than I generally like (although, i suspect many will, especially around the Holidays). I thought the aroma was off-putting too. HOWEVER, as suggested in the description, I tried it finely ground in my expresso machine and it made a very good expresso.

I know that Red Rooster is a VERY light roaster (they are relatively local to me), so I was hopeful that since it was a medium dark by their standards it would be my 'normal' light roast. It was definitely better than a previous light roast from RR, but the darker notes (the caramel and chocolate) were still hard to discern.

Maybe it was just the somewhat darker roast but didn't care too much for this one. Definitely picked up on the chocolate notes.

This was just ok. Bitter earthy. Had a burnt aftertaste that lingers. Like burnt Carmel but not in a nice way.

Have only used for espresso so far. I'm not getting the chocolate or the caramel flavors, it's very bitter (but not in such a way where I brewed incorrectly). I'm excited to try this as a pour over or cold brew. It goes well with milk. I think maybe I like my coffee a liiiiittle bit brighter. We'll have to see!
