This is the Brazil Serra Negra brought to you by Quills Coffee. This pulped natural coffee was grown by the various small holder producers in the South Minas, Cerrado, and Matas de Minas regions of Brazil between 1,200 - 2,000 meters above sea level. The cup is rich and full bodied with notes of roasted nuts and chocolate.

This is just a fairly plain coffee. The V60 in a small pour (18-21 grams) seemed to produce a better cup than out of my Chemex with 30-50 grams. I incorporated some stirring extraction as much as possible, but still even so the coffee was just kind of bland for me. Just not tasty, tasted old.

We have tried this both via drip machine and pour over with the Chemex. I like the acidity that the chemex brought out. I was worried because I typically do not prefer nutty flavors, but this was subtle so it was good.

I loved this coffee. Brewed it in the Kalita Wave 155 and found that it grinded perfectly at 18 and used a 17:1 ratio where the total brew time was typically between 3-3:15. Dynamic cup that overall tasted like milk chocolate but with some occasional subtle variety like black cherry. I often steer clear of Brazilian coffees but I found this one to be more balanced than others I've had.

A fantastic single origin that hits all the right notes to please most drinkers. Light enough roast but full bodied mouthfeel. Chocolate on the nose turns to a slight vanilla custard in the mouth before consolidating into a smooth finish that still lingers a bit on the finish.

I've always had a bad impression of coffees from Brazil, and this one doesn't help with that impression. It seems no matter what I do I can't extract much flavor. Maybe it's the freshness of the roast, maybe its the character of the beans, or of course, maybe it's just user error. I'm glad there's another Brazilian coffee coming next for comparison.

Having never heard of Quills prior, I was excited to receive a new roaster this round. Having primarily purchased or received fruity and acidic coffees over the past year, I always like a switch up and this coffee delivered. This is a candy bar in a cup. The nutty and chocolate notes which I’ve come to expect from Brazilian coffees was excellent. This coffee was definitely more full-bodied than others I have had recently, leaving really solid flavor notes on the tongue after drinking. Honestly one of the best coffees I’ve ever had.

It’s not bad coffee, but it’s not coffee I prefer. Since receiving this coffee, I’ve had a total of 3 cups, each brewed differently. I taste the nuttiness of the coffee. It is definitely full bodied. For breakfast I had it paired with a simple miso ramen, the saltiness of the ramen cut out most of the acidity I didn’t enjoy in the cup.

UPDATE: I have turned this coffee into a cold brew, using 80g of coffee to about 32 oz of water, and it is ABSOLUTELY DELICIOUS! I guess the notes just taste sweeter this way. Should try with other coffees.

Overall this was an OK coffee. VERY nutty, almost barley-like. I homebrew beer as well, and this coffee reminded me of unboiled wort (especially the smell!) without the sweetness.

Sorry I haven't been rating these coffees lately, I keep forgetting to do it! Lately the darker roasted coffee that I have been getting has been great, and the exposure has been helping me develop a palate for the chocolaty flavors like I was asking in my last review.
Unfortunately I was sick pretty much all last week, and I haven't even finished the Quills coffee, let alone the newest shipment I got haha. I will rate the newest shipment when I get to it though.
I do have another coffee question: should there always be some bitter notes in each cup of coffee that is brewed? I've noticed that I like grinding my beans finer so get some bitter notes for these darker roasts. Would light roasts benefit from having some bitter flavors? Or would I grind those beans coarser to minimize the bitterness and maximize the sweeter flavors?

This was a delicious peanut but cup last time I got it. Now it's way over-roasted. It tastes like nothing but burnt. I knew something was wrong right away because the beans were way too soft and easy to grind in my hand grinder. There's nothing good about this anymore. I used to think this was 5 stars.

Seriously excellent cup of coffee. Roasted to perfection, can really taste the quality of the coffee. A perfect balance of flavor.

Extraordinarily smooth, rich flavor. There's a woodsy tone underneath the chocolate main impression. And a little spiciness in the aftertaste that was a nice surprise.

This is the chocolatiest coffee I have ever had. I enjoy it very much. The roasted nuts flavors come out a bit more as the coffee cools, but it is certainly one of my new favorites.

This coffee really didn't have a lot of flavor. I experimented with several grind sizes and couldn't get past the plainness of it. The packing, however, was beautiful, and that's always a pleasant addition in my opinion!

I really enjoyed this coffee! Easy drinking yet complex at the same time.
Nutty taste at the start and an interesting smooth appealing finish.
The bag was gone quickly.
