This is the Ethiopia Worka Natural Anaerobic Yeast brought to you by Klatch Coffee Roasting. This Anaerobic Yeast processed coffee was produced by the Gedeb Sakarao Washing Station in the Gedeb region of Ethiopia. Anaerobic Fermentation ripe cherry deliveries from Chelbiesa Village are first sorted by hand. The best cherries are then placed into Grain Pro bags with an added mixture of brewed yeast. The bags are sealed and as the fermentation of the coffee and yeast begins it produces CO2, creating an anaerobic environment in the bag. After 72 hours of fermentation the cherries are removed from the bag and moved to dry on raised beds for 2–3 weeks until they reach their target humidity.
Fun different flavors, but not my new go to coffee. A delicious novelty.

Very good coffee with a nice fruity flavor. One of the best coffees I have had recently.
It was interesting. I loved trying an anaerobic yeast process coffee, so please send any interesting washes/processes my way! I did find that there's a little bit of a fermented smell to the beans when brewed, which was slightly off putting. I felt that the aroma once brewed was fine, but I wasn't blown away by the taste. It was good and I'd be curious to try more from Klatch, but not better than some of the more recent selections.
Fruity, creamy, chocolatey.... This one is up there as one of the best bags I've received
