This is the Brazil Serra Negra brought to you by Quills Coffee. This pulped natural coffee was grown by the various small holder producers in the South Minas, Cerrado, and Matas de Minas regions of Brazil between 1,200 - 2,000 meters above sea level. The cup is rich and full bodied with notes of roasted nuts and chocolate.
This coffee is unacceptable. To me it seems to better. I do not enjoy it and my wife is unable to drink it at all. She's drinking instant coffee instead. Please do not send this or coffees similar to it.
Complex with decent body. Nutty with hints of Carmel. 16g per cup with pour over was were I found the sweet spot.

This is just a fairly plain coffee. The V60 in a small pour (18-21 grams) seemed to produce a better cup than out of my Chemex with 30-50 grams. I incorporated some stirring extraction as much as possible, but still even so the coffee was just kind of bland for me. Just not tasty, tasted old.
We did like this one but would like a bit stronger. Don't know if that's the correct term - more full bodied. Is the problem perhaps that chocolate is involved in the mix?

This has been my favorite coffee we have received. The coffee is well balanced with not a lot of bitterness.
I do like how it's a lighter roast, has a slight "woody" taste which I assume is the earthy quality.

On the higher bitterness side, I could not get a nice manual brew from this one, even maxing out my grind size.
This is good, especially with a little vanilla creamer in it.

I loved this coffee. I do think a recommended grind size/brew temp and coffee/water ratio would be very helpful for each bean we are being sent.
I like the richness of it that still has a very pleasant and not-overwhelming mouthfeel. Tastes like there are several counterpoint flavors that round it out and keep the stronger flavors in check.

First Brazilian coffee ever for me. Offers a great start to my morning.
We have tried this both via drip machine and pour over with the Chemex. I like the acidity that the chemex brought out. I was worried because I typically do not prefer nutty flavors, but this was subtle so it was good.
I loved this coffee. Brewed it in the Kalita Wave 155 and found that it grinded perfectly at 18 and used a 17:1 ratio where the total brew time was typically between 3-3:15. Dynamic cup that overall tasted like milk chocolate but with some occasional subtle variety like black cherry. I often steer clear of Brazilian coffees but I found this one to be more balanced than others I've had.

Somewhat burned flavor -- I think I don't like "full-bodied" and would prefer a more balanced coffee where there's more nuance in flavors.

A fantastic single origin that hits all the right notes to please most drinkers. Light enough roast but full bodied mouthfeel. Chocolate on the nose turns to a slight vanilla custard in the mouth before consolidating into a smooth finish that still lingers a bit on the finish.

Prepared with V60, this one had a smooth body, but too heavy for my liking. Chocolate is the most prominent flavor I get, which is nice, but I wish there were more fruit notes to compliment it.

I've always had a bad impression of coffees from Brazil, and this one doesn't help with that impression. It seems no matter what I do I can't extract much flavor. Maybe it's the freshness of the roast, maybe its the character of the beans, or of course, maybe it's just user error. I'm glad there's another Brazilian coffee coming next for comparison.

Although very good, it wasn't quite as rich as my previous roasts. It was very smooth though and very approachable. Brewed in a Moccamaster - ground with a Encore (setting 18)

Please take my rating with a grain of salt. I'm a light roast fan but am remaining open to different types of coffee. It's not that this coffee tastes bad, it just doesn't have the flavor notes of light roasts that tailor to my taste buds.
Having never heard of Quills prior, I was excited to receive a new roaster this round. Having primarily purchased or received fruity and acidic coffees over the past year, I always like a switch up and this coffee delivered. This is a candy bar in a cup. The nutty and chocolate notes which I’ve come to expect from Brazilian coffees was excellent. This coffee was definitely more full-bodied than others I have had recently, leaving really solid flavor notes on the tongue after drinking. Honestly one of the best coffees I’ve ever had.
Back on track. Please stop sending light/medium bodied coffees.

This coffee just didn’t have the same flavor as the previous ones. It seemed more bitter. It is still good coffee, just not the flavor characteristics we typically enjoy.

It’s not bad coffee, but it’s not coffee I prefer. Since receiving this coffee, I’ve had a total of 3 cups, each brewed differently. I taste the nuttiness of the coffee. It is definitely full bodied. For breakfast I had it paired with a simple miso ramen, the saltiness of the ramen cut out most of the acidity I didn’t enjoy in the cup.
UPDATE: I have turned this coffee into a cold brew, using 80g of coffee to about 32 oz of water, and it is ABSOLUTELY DELICIOUS! I guess the notes just taste sweeter this way. Should try with other coffees.

Generally speaking, I like naturals. This one isn't a fruit bomb like some others, but it's definitely good. Subtle. Chocolate as a note is right on.

Adequate coffee, but not as top tier as coffees from Grumpys, Inteligentsia, 49th Parrallel, etc. Flavours are a nice but muted. Wouldn't call it full-bodied, more of a medium, which isn't a bad thing. Would drink again, not a bad daily for the price.
It's very thin flavor-wise! I have been coarsely grinding in my burr grinder and while I like it I am amazed at how light it is. It's refreshing but almost like I'm not drinking coffee.

Wow this is really good coffee.
Overall this was an OK coffee. VERY nutty, almost barley-like. I homebrew beer as well, and this coffee reminded me of unboiled wort (especially the smell!) without the sweetness.
I could get down on this very occasionally, but would not drink it on the regular.

An excellent medium-light roasted coffee that was amazingly versatile in brew method. The nutty notes came through with every method and the chocolate notes were especially present via pour over. This was one of the best craft coffees I have had in quite some time.
Nice and smooth blend of flavours. Could perhaps be a little punchier for my tastes.

I enjoyed the first shipment better than this Brazil Serra Negra. It was ok but not great. I enjoy the east African single origins the most I think.

This was a solid coffee to have in the evening off a ceramic drip or a Brikka.
Didn't like it very much.
Aromatic and nutty strong as well. I like it, used with drip coffee and works well with it.

Smooth, rather bland
We used the French Press the first few times making this coffee and it was meh. I recently purchased the Hario v60 and Fellow Stagg to begin my journey into pour over coffee at home. I can say the pour over method produced a MUCH BETTER cup! I loved how smooth this coffee was and the nutty undertones.

Literally about to be my fourth bag of Brazilian.... you should invest in other origins of coffee. There so many incredible origins and roasts of coffee from all over. Brazilian is great for that cliche coffee flavor, but that's it...
This coffee was ALRIGHT. There was nothing distinctly wrong with it. It was just so ridiculously mellow that there was no defining characteristics other than maybe a milk chocolate taste.
This is a flavorful, smooth coffee with very low acid. Our favorite selection so far.

Sorry I haven't been rating these coffees lately, I keep forgetting to do it! Lately the darker roasted coffee that I have been getting has been great, and the exposure has been helping me develop a palate for the chocolaty flavors like I was asking in my last review.
Unfortunately I was sick pretty much all last week, and I haven't even finished the Quills coffee, let alone the newest shipment I got haha. I will rate the newest shipment when I get to it though.
I do have another coffee question: should there always be some bitter notes in each cup of coffee that is brewed? I've noticed that I like grinding my beans finer so get some bitter notes for these darker roasts. Would light roasts benefit from having some bitter flavors? Or would I grind those beans coarser to minimize the bitterness and maximize the sweeter flavors?
This was a delicious peanut but cup last time I got it. Now it's way over-roasted. It tastes like nothing but burnt. I knew something was wrong right away because the beans were way too soft and easy to grind in my hand grinder. There's nothing good about this anymore. I used to think this was 5 stars.
This coffee was very dark and roasty. This should not have been sent as it does not fit my profile at all.
The full bodied Flavor is really strong with this one. Not our personal favorite, but if you like a darker more traditional tasting cup, this coffee is for you.
Really liked this one! The description is pretty much spot on, so not a whole lot to add. A relatively light coffee really, but not without real richness and character. A moderate, pleasant acidity and a very definite nutiness with against a solid base of chocolate. Good stuff!

Probably my favorite one so far. Great rich flavor, full bodied, and perfectly roasted. The slight bitterness at the end compliments the chocolate and nutty notes very well.

Extraordinarily smooth, rich flavor. There's a woodsy tone underneath the chocolate main impression. And a little spiciness in the aftertaste that was a nice surprise.

My least favorite so far
This is the chocolatiest coffee I have ever had. I enjoy it very much. The roasted nuts flavors come out a bit more as the coffee cools, but it is certainly one of my new favorites.
This coffee really didn't have a lot of flavor. I experimented with several grind sizes and couldn't get past the plainness of it. The packing, however, was beautiful, and that's always a pleasant addition in my opinion!

A little on the bitter side, and unbalanced, with to much acid.
I like this even more than the last one. The chocolate flavor is great, with just a hint of acidity without getting too sour.
Tastier at lower ratios and does really well with some milk/cream. Tasting notes were spot on: straight milk chocolate with some fruit notes.
I really enjoyed this coffee! Easy drinking yet complex at the same time.
