This is the Santa Ana Pineapple Process brought to you by Bird Rock Coffee Roasters. Grown by Fernando Diaz in the Santa Rosa region of Guatemala, this unique coffee was fermented with the fruit and juice of pineapples. The fermentation builds a colony of wild yeasts and bacteria, leading to a vibrant cup with various fruit-like flavors. We taste flavors reminiscent of yellow plum, grapefruit, tamarind, toasted coconut, brown sugar, pecan, and pineapple.
My favorite coffee I've received so far from mistobox. Usually I lean more towards medium and dark roasts but the flavors of this coffee we're so good! I tasted the creamy smooth maple nougat, with nuances of the coconut and mellowed out grilled pineapple. I was also impressed with the strength of the coffee even though its light roast. It still stood up very nicely with a little milk without tasting watered down. I ground it at a level 5 out of ten, 1 being finest and 10 being the most course grind and it was just right. Amazing! I can't wait to try more from this roaster.
Not gonna lie... kind of a womp. I read the description of this coffee and I got excited; "tropical, pineapple process, plum, grapefruit..." yet I don't really taste any of those notes. I expected something really fruit-forward like an Ethiopian, but it tastes like any other specialty Latin American light/medium roast coffee. I mean it's good, but the description is very misleading.
