This is the Colombia El Vergel brought to you by Dawson Taylor Coffee Roasters. This 100% Caturra variety of coffee was grown 1,350 meters above sea level at El Vergel in the Tolima region of Colombia. It undergoes six hours of washed fermentation followed by twenty hours in steel tanks. The coffee is then dried both mechanically and by the sun and produces a juicy, balanced cup with apple, caramel, and floral qualities.
I usually don't like lighter roasts, but this roast wasn't nearly as acidic as some other light roasts I've had. I definitely like the floral qualities and could be okay with lighter roasts if they lean more towards these refreshing qualities rather than acidity.
