This is the Colombia Paso Fino brought to you by Colectivo Coffee. This fully washed coffee was grown by the various small holder producers in the Cauca and Huila regions of Colombia between 1,500 - 2,000 meters above sea level. The Paso Fino has a pronounced citrus acidity and full body and is an incredible cup no matter how you brew it.
This coffee has wonderful almond and caramel notes running through it, but then lightens up on the finish with perfect balanced acidity and fruit. A terrific balance you'd come to expect from a blend in a single origin.

A good coffee but it does not meet my qualifications as a daily drinker. Tastes a bit watered down (I used the same measurements and methods as the La Pena). I prefer something more full bodied. The acidity was just right, not too bitter. This is definitely one of the better Colombian coffees I've had. The flavor is too sweet/citrus-y for me, it gives the coffee a watered-down flavor that I do not appreciate. I prefer a coffee that will strangle my taste buds with a rich flavor. Even with all that said, it's still a decent coffee.

This is my least favorite so far. I do enjoy it, but less so. It seems to have a darker, grittier, earthy flavor. Almost heavy. However, still some interesting flavors and nuances that maybe a different brewing method would better highlight.

Super striking citrus! My first thoughts on this when brewed in a press was that perhaps the citrusy, almost sour notes were not for me. But recently switching to a pour over method, these beans lent themselves to an enjoyable cup with very bright flavors of lemon & lime that wake me up
Mild and a little bland, Could be sour at times. Not incredibly complex
Caramel sounds great, juicy sounds great, citrus could be tolerable. However, the "citrus" is more like "someone brewed a vitamin C tablet" and the intense acidity completely obliterates any potential subtleties the coffee may have. Someone kind might call it tangy, acidic, or citrus. There's no balance here whatsoever.
When I smelled the beans I got sort of a toasty, almost coconut aroma on a long inhale. Tasting notes: high acid, brown sugar maybe? I am new to tasting coffees. I haven't been able to detect floral or citrus notes really. It is very enjoyable though
Overall I really enjoyed this coffee. It had a unique taste profile which was new to me. It tasted fresh and clean. I think something with a little less citrus note would be preferred. Id also be open to something with the same or a bit darker roast. Being new to tasting coffees that aren't store bought off the shelf im still exploring and very open to different options.

Aroma is nutty, with slight sweetness
Taste is quite acidic, and bright. Any sweetness found in the aroma was lost in taste. This roast was a bit of a challenge to get right, from bean to cup. Took me about 4 attempts on grind settings to adjust for proper extraction time, and found the coffee to be acidic and slightly sour no matter what I did.
Overall, it's an okay cup of coffee, and is great to wake yourself up in the morning with, but not an everyday coffee for me due to the sourness of the cup.
I enjoyed the citrus flavor and I got a little of the caramel but I am not sure how juicy related in terms of flavor. Yet. My wife said hers was a little sour but I am not sure I agree.
We just moved over to the Espro Press P7 today and the same bean with the same grind was much nicer than yesterdays cup with our older french press. I also noticed a huge difference in trying a different grin setting with the Baratza 586 Baratza Virtuoso Coffee Grinder we just bought. We are also weighing all of our beans and water with our Hario V60 Drip Scale and Timer. I started stirring the coffee with the water at the one minute mark so I am refining my process as best I can to isolate the flavor of the bean.
Over I enjoyed the bean very much and am ready to experience the next one. We are watching the show 'Dangerous Grounds" to learn about the country of origin and what to expect. This process with the show we are watching makes this much more exciting and meaningful.

- slightly floral, very citrusy aroma
-tasted a little like toasted corn flakes, with a hint of citrus. Very slight dark chocolate flavor as well.
-overall not my favorite, but still made a decent cup. Tried pour over method, as well as French press.
Hario V60, 92C brew temp, 45-50s bloom, 3 minute total brew time. 1:15 ratio. Filter was rinsed and carafe was heated prior to brewing.
First cupping was too coarse (2.11 on an aergrind, 15s to fully drain V60 at the end) leading to an underextracted cup. Citus (orange mostly for me) was very pronounced.
2nd cupping was closer to ideal (2.7 on aergrind, 25s drain time). Still was citrus forward but was able to pick out some burnt sugar and toasted cocoa. Flavors quickly devolved 2-3 minutes after brewing and settled at slightly sour with a cocoa finish.

Just returned from Hawaii and my coffee was waiting my return. Had three cups thus far. Overall it is a very good coffee with all the notes revealed. When I grind my beans (per cup) do you suggest a fine or coarse grind? How much coffee should be used for each 6-7 oz cup?
I think my next batch should be a bit stronger as I drink my first cup at around 7am. I also have a cup in the PM around 7pm.
This is a decent coffee. It is definitely more acidic, and you can get notes of citrus. The citrus can be enhanced by doing an iced pour over brew. While there were notes of citrus it was somewhat flat other than that.
This coffee is pretty underwhelming. The bean has a nice fragrance, however once brewed, it is hard to avoid it tasting bitter, even when adjusting brew ratios and methods. It is not terrible tasting, but it is not very desirable. The bold taste covers up any chance of tasting citrus or juiciness as the description says.
It was a good coffee. A bit citrusy, but delicious flavor. We made this in both the drip & Chemex, and both turned out great.

Strong citrus notes with bright acidity. Caramel was there, but faded fairly quickly. Finish was a bit short.
Overall positive - a balanced, unoffensive palette cleanser. I drink it black first and then decide whether I want to add the occasional milk. I enjoyed the level of acidity, not too sour or pungent, and thought it was countered nicely by a broad toasty sweetness. Could be a contender for a solid daily driver. I didn't feel it was that citrusy though. I blended it 50-50 with a medium-dark roast single origin indonesian and found that to be the best with milk.
Definitely got caramel, citrus and juicy. A little malt also. A little thin for me in general, but even that is a nice change sometimes.
I would rate this one more like 3.5. It was alright but the flavor profile fell kind of flat.

Didn'tc have the flavor strength i thought it would. Not bad but probably not my first choice if i was to pick. Not a big caramel fan.
This was okay. Lacking a little bit on flavor and a little thin. Too much citrus flavor without anything to cut it.
The flavor of this coffee was very good. I did find the citrus flavors over powering though. I tend to lean towards more earthy and bold flavors similar to Sumatra coffee.
This certainly met all the notes it claimed to have! I was impressed! Not to mention it came in a pretty cool bag.
Had a hard time brewing this one just right. Went to a friend's Cafe and his pour over ended up a little better.
So the coffee was probably good but I failed to take into account that my preference is actually strong flavored coffee, like espresso strong coffee. I think I need to change my preference to espresso type coffee. Now that I've tried this one, I realize the ones i need to recieve are strong espresso type bags. I would also like for them to be international as well. Would those type of coffee's be available?
Very tasty, smooth, mild. Generally like a bit brighter or pungent flavor. More earthy, citrus, juicy. All the same, just more.

OK, but not my favorite because it is pretty tart and light in body. I'm new coffee (hence joining club to get some exposure). I guess I like darker roast than this? I usually get the baridi blend from Peets which I like, but figure I can do better. So next time please look for fruity, but not citrusy, fuller bodied, but not too roast. Thanks.
First off, this is incredibly better than anything I've had out of a store. It got 4/5 probably just out of preference. 5/5 on the normal brewing method (coffee Maker), 4/5 on the Chemex. Citrus was good, roast was good. Ready to try something else!
This coffee was alright, but it wasn’t terribly exciting or memorable. I found it worked best for me at a 1:15 ratio with water heated around 195 F.
Overall, I enjoyed a cup when I managed to brew it right. It took me a bit longer to dial in my brew technique with this one, which probably negatively affected my review.
It was good, tasted like the small batch coffee I get from trader joe's. One of the better coffees' i've had was the whole bean coffee from Amor perfecto, the antioquia batch if that helps. Maybe something with a stronger flavor would be better, just guessing, without brewing with more beans. I'm not really sure how to be helpful here. Thank you
I loved the notes of sweet citrus and caramel, but one of the things that stood out the most was the tartness and the acidic feel. Definitely a more unique light roast.
Nothing particularly exciting about this coffee. It was good, but nothing special. definitely tasted the citrus, but not to much else.

This is a nice, straight-ahead coffee. Balanced, mild flavor. I like it, but it's a little boring. I'd love to try something a little more unusual - surprise me! :-)
This is a little brighter/sharper than I'm used to drinking. Not necessarily in a bad way - the fruit profile is very tasty! - but I think I might enjoy this a little more in the summer when its warm outside (It was 19 degrees on my ride into work this morning so I could've used something a little bolder!

I was not a fan of the citrusy and sour flavor profile of this coffee.
When smelling the beans and grinding the beans had a great roasty aroma, which I was looking forward to, but unfortunately did not translate to the cup. The sour (my least favorite) taste was too prominent.
Iinadjisted my brewing to ensure that it was not under extracted, but after three cups (twice with Chemex, with adjustments, and once with aeropress) the sour taste was still too prominent

Very satisfying. Brewed it via french press and drip coffee maker, and both ways were delicious. Coffee was rich and flavorful. My general taste tends to vary between light and medium roasts. I was very satisfied with this coffee and would definitely reorder in the future.
The most important quality in coffee, for me, is balance. This was balanced, from first sip to last. Excellent coffee.
I was hoping to have my new coffeemaker in time to really give a good review, but it seems to be lost in the ups universe.
I love that this coffee has such a smooth mouthfeel. I can’t really pick out any strong flavor characteristics, but I do like the level of roast- it’s not bitter or overly bold. Not much of an aroma, however.
Update: got my new coffeemaker and immediately brewed a cup. Still love the smooth mouthfeel of this coffee. I taste a bit of caramel on the front, which I like, but there is not much follow through.
Did not like this coffee at all! Apparently, I'm less of a fan of brighter coffees than I thought, but moving forward, let's aim for smoother instead. This one tasted sour. (Smelled heavenly, though, which was a real tease).
I'm really enjoying this one! It has a very smooth quality to it. Although I'm generally wary of light roast / citrusy / juicy coffee, this one definitely works for me. I guess I'm more open minded than I thought. Keep em' coming!

While I enjoyed the coffee and liked the fact that there seemed to be varied flavors I could taste, I found it to be too 'citrusy' for me. I'm also not quite sure how to describe it, but is seemed to be too acidy or 'sharp', almost a little sour to me. I think I might prefer a bit of a darker roast with deeper 'coffee' flavor. This is the first time I am trying to describe coffee in words and appreciate the opportunity to have my picks tailored by you!

On chemex I can't seem to make this POP. An inverted aeropress has better results but I don't get a lot of the brightness or juiciness I was anticipating. This does have a subtle sweet round flavor of graham cracker at the front that is quite tasty but it is fleeting. Overall I am finding it to be less vibrant than I was expecting.

Very very light. Not bad as a general beverage but not something I want when I want coffee. Other than that, it's good. Just way too easy to drink and need a lot for a decent kick caffeine kick.
Coffee was very flat. It had a clean taste but no finish. This would be something I would not try again. I ended up making it into cold brew.
One of the best coffee aromas I have ever experienced, in the bag and in the cup. Lighter roast but full body. The Colombia taste I have had before but I very much enjoyed this coffee. Brewed with chemex.
This was my last coffee before I requested something more full-bodied and earthy. This wasn't as acidic as the last, but still a feel I didn't prefer. Even though I haven't really enjoyed the last two, I feel like I am figuring out what I really want! Awesome in that sense!

I enjoyed the Colombia Paso Fino more than the Dillanos - I think the earthiness of the prior coffee was a little too much for? I didn't think I would like much acidity, but I enjoyed this level in the Paso Fino, and I didn't find it bitter, which I liked. The beans were lighter than I typically use, but the flavor was still rich and full.
A light roast in the cup. Not my favorite style.
Has a puncturing, sweet brightness, followed by a mellow aftertaste. Flavors feel a bit muddled, but the contrast is very dicernable. A nicely balanced cup
