Description
This is the Sumatra Highlands Fair Trade Organic brought to you by Colectivo. This semi-washed coffee was sourced from the growing region of Aceh in Sumatra and was produced by the various small holder producers at 1,200 - 1,500 meters. This medium roasted coffee from Sumatra is a classic Indonesian profile with low acidity, syrupy body and earthy and herbal notes.

This coffee just didn't do it for me. The body is kind of bland and sort of one-note. It is very low in acidity, which is nice, but it lacks brightness. The description claims that it is earthy, herbal, and complex, but I can't say that any of these aspects really stand out in the finished product. The aroma of the freshly ground beans is amazing, though. I just expected more.

More syrupy than I care for, and could not pull out the earthiness when using pour over. Liked it more with french press than pour over.

I prefer fruitier more acidic coffee. But probably the best Sumatra I’ve ever had.

I thought this was a great start. It was a little lighter than I expected and very Earthy. A little too Earthy. I have only brewed it once so far so will need to try it again to get a better idea.

Did not really care for this coffee. Quite bitter. Due to the bitterness, i could not taste many flavors. However, i have had other coffees from this roaster and i have really liked them.

Delicious earthy flavors rounded off with pleasant acidity. Well balanced cup of coffee via pourover and totally different (still delicious) qualities from cold brew extraction.

I like how stable this coffee is. Even if I added more beans to my brew, it won't cause it to be more bitter. A good pick me up in the morning.

This is a polarizing coffee. At the core of its smooth, complex flavor is an intensely earthiness -- a quality I both loved and disliked in each cup. I'm not sure that three stars is the right number: some sips were worth five, while others fell far short of the mark. On the whole, I enjoyed this coffee, though not without reservations about its strong earthy tones.

Overall good coffee. Hard to strike the right balance with the earthiness. When coffee is brewed too strong or overextracted, the earthiness combined with bitterness can be overpowering.

My wife and I found this coffee a bit too earthy, but we otherwise enjoyed it. I think if the earthy notes were a bit more subdued, then the herbal notes, which I tend to enjoy more, would've been more pronounced.

Was the Sumatra Highlands Fair Trade Organic better or worse? All were good, not better or worse. Was the coffee acidic or sour? It wasn't particularly acidic. Bitter? No. Burnt or roasty? Roasty. Was the color of the bean lighter or darker than what you typically enjoy? Lighter

I grew up in the Milwaukee area and am familiar with Colectivo (Alterra) coffee. Good, but not enough punch for me. A little on the light side. Too Herbal.

Definitely tasted a lot of the earthy notes. The start I really liked, but the finish I wasn't a huge fan of although I wouldn't go as far and say I did not like it. I also thought I tasted some citrus notes in the beginning and I enjoyed the overall finish. I felt like the coffee didn't overstay it's welcome. It was definitely crisp and seems to have a medium consistency, which are qualities that I enjoyed drinking it over ice.
