I thought for sure based on the other reviews I would like this one, but it just wasn’t working for me (in a Chemex). The middle part of a sip tasted really dark, and then the finish was more sour than I like. I tried varying brew techniques a bit and I couldn’t dial it in.
Bright with nice acidity for a darker roast. Bit of dark cherry or plum. Tiniest bit of green wood like in an Ethiopian light roast. Slight menthol tingle on the finish. Well balanced and great with breakfast.
My regular go-to
I had a difficult time dialing this in, and ultimately needed to stray from the standard recipe, grinding finer than I would otherwise, 18g in, 36g out, 40 seconds. Found that this brought out more of the interesting fruit notes without getting bitter or over-extracted. Also kicked up the temperature a degree or two beyond what I normally use on the silvia pid (hard to quite match to final brew temp unfortunately). Maybe with further optimization I'll like it more, but in the end, was a bit disapointed especially given the exceptional reviews cat cloud gets. Maybe it was this batch of the truth that was less interesting or maybe it's my lack of skill that made it hard to bring out the best notes.

I don't understand how this is the lightest possible on the roast scale. It looks, smells, and tastes like a dark roast: burnt and terrible.
Hard to miss with Cat & Cloud. Another solid coffee with a lot of flavor. Acidity was a tad high.

Tasted better as it cooled down
It just tasted burnt. We tried varying the temperature and bloom length but nothing really helped.
I couldn't get the ratio right on my coffee machine. Either it was too thin and uncomplicated (no complexity!) or tasted a little too dark. I don't like drinking this one black! It was much better when I put it in my Moka point but still a tad too dark for me.

Great for espresso! Easy enough to dial in, but still acidic and fruity in just the right way.
A very good coffee. A bit mild, but I thought it had a great balance of acidity. It is juicy, as it says. A great selection, especially if you like your coffee a little brighter. Note: I had it black every time.

Used this for French Press. It had a bit of a nutty aftertaste; slightly more bitter than what I prefer. Great juiciness and sweetness. There were some really good flavors that I couldn't quite distinguish. Never got the grind size down perfectly.
Pretty middle of the road easy drinking coffee.
It was good but a little bland, nothing stood out with this coffee.
Too much citrus for my taste and a bitter aftertaste. But palatable I suppose.
Sweet without being overly acidic. A good palate cleanser from darker roasted espresso blends, but not my preferred every day drink.
